For the fourth year, we are offering three microlots from Gamaliel Ríos Ortíz, Mexico. All three feature the Peñasco variety processed as a washed, honey, and natural.

Grown by third-generation coffee producer Gamaliel Rios Ortiz in the lush landscapes of the Sierra Madre in Chiapas, Mexico, this exceptional coffee embodies a legacy of craftsmanship and dedication. Gamaliel’s farm, Castaño, is nestled between 1,400–1,700 meters above sea level in the township of Plan de la Libertad Alta, where the high altitudes and fertile soils produce vibrant and complex coffees.

This lot showcases the Peñasco variety and features a meticulous honey process. After hand-selecting ripe cherries, Gamaliel de-pulped the fruit, leaving the sticky mucilage intact for a controlled fermentation of 120 hours. The coffee was then carefully dried on raised beds for 18 days, allowing the beans to develop their nuanced flavor profile.

Expect a cup that’s as expressive as the Sierra Madre itself, with layers of sweetness, a velvety texture, and the unmistakable care of generations of expertise.
